Kitchen Knives 101: Everything You Need to Know

If you ask any professional chef what kitchen tools are most essential, kitchen cutlery will most likely rank at the top of their list.  Reason being?  There is so much in the world of cooking that can be accomplished with a good quality knife!  For today's post, I wanted to share my guide to kitchen knife 101 with you all.  I will run through the essentials for any knife block, my tips for basic knife care and a few of my personal favorite kitchen knives.  Kitchen knives are a huge part of cooking, so it's important to be empowered with the necessary information regarding the basics of kitchen cutlery to ensure that you are set up for culinary success!

Knife Block Essentials

  • Paring Knives- knives with 3inch blades.  These knives give you the most flexibility for peeling, coring, cutting and shaping various fruits and vegetables.  I recommend having both serrated paring knife and straight paring knife.
  • Chef's Knife- a large knife (either 6", 8" or 10" blade) known to be the most versatile.  Traditionally used for slicing firm vegetables, mincing garlic, crushing spices, etc.
  • Slicing Knife- a blade that is at least 10" long and used to slice fruits very thin, as well as both raw and cooked meats. 
  • Santoku Knives-  I recommend having both 5" and a 7" Santoku knife.  This style knife is thinner than a chefs knife, making it ideal for easily slicing those tougher vegetables and chopping produce with great precision.  
  • Steak Knives- I recommend having at least 8 steak knives.  These knives are ideal for single use when cutting through tougher entree meats (such as beef or pork). 
  • Serrated Knife (aka Bread Knife)- This knife has a long scalloped blade that slices easily and cleanly through hard crusts as well as tender crumbs.
  • Honing Steel- this metal rod is used to realign or reset the knife blade after each use.  Note- a common misperception is that the honing rod is used for sharpening, when in fact it is not a sharpening tool.  
  • Kitchen Shears- used for finely/precisely chopping herbs and even cutting up an entire chicken!  A good pair of kitchen shears is essential for any cutlery set.

Caring for Your Kitchen Knives

  • Always hand wash your kitchen knives (both blade and handle) after each use.  Never use the dishwasher to clean your knives as they tend to dull the blades and warp the knife handles. 
  • Always dry your knives really well post wash and prior to storing.
  • Have your knives sharpened a few times a year.
  • Store your knives in either a knife block or drawer storage.  If knives bang into each other while being stored, the blades can become damaged.

My Personal Favorites

  • Shun Kanso Chef's Knife 8"- Attempting to chop up a butternut squash used to be a nightmare!  True story- I have actually broken knife blades in the process of dicing squash. It wasn't until this past summer, when I was introduced to the Shun Kanso Chef's Knife that I finally realized squash prep work didn't have to be that laborious.  This knife easily glides through even the toughest of vegetables and has made food prep an absolute pleasure!   
  • Kyocera 4.5" Utility Blade Ceramic Knife - This knife has been featured in my August Kitchen Tools post and now again in this post because it really IS that fabulous!  Never in my life would I have thought that a knife would be able to slice tomatoes paper thin until I came across this knife.  When it comes to slicing soft produce with great precision, nothing beats this fabulous piece of cutlery.  
  • Victorinox Serrated Paring Knife- This is another knife that has been featured as a kitchen tool of the month and for good reason!  It cuts like a dream, costs less than $10.00 and is the only knife I know of that can go in the dishwasher time after time without ever going dull!

New Year, New Me: How I am Getting Healthy in 2016

Traditionally, January is all about making those aspirational new year resolutions.  While I have done endless resolutions in the past, I can say with confidence that the majority of those resolutions have never really stuck past this month (could just be me, but I have a feeling I am not alone here).  

This year I am not making a resolution, but rather I am focusing on how to improve my life and well-being with simple adjustments that can really have a big impact.  My goals for this year don't revolve around weight loss or reinventing myself, but rather to simply feel my best every day.  So for today's post, I wanted to share with you what modifications I will be implementing this year in attempt to be my healthiest self.

Fitbit

In addition to my beautiful bar cart, I also received a Fitbit for Christmas this year (*Fun Fact- Fitbit was the #1 most downloaded app on Christmas Day 2015).  I am an avid runner and had always thought it would be interesting to see how many steps I was taking daily.  Of course in addition to steps, I thought it might be rewarding to know how many calories all of my athletic efforts were burning.  Now that I have been wearing the Fitbit for about a month, I can say that I have been pleasantly surprised by the reasons why I have become a fitbit devotee.  

I have ended up finding the most value in the awareness it raised towards my inactivity in the office.  Since I started wearing the fit bit over the holiday break, I was seeing large step number totals each day (which was fabulous).  It wasn't until my first day back at the office that I received a very rude awakening.  On average, I take about 5,000 less steps per day when I am in the office at work, than when I am at home.  I was horrified by this reality.  Immediately I decided to do something about this deficiency and have now made it part of my daily routine to go on some sort of a walk during my lunch break.  This not only helps to improve my step count for the day, get my blood flowing and fresh air circulating throughout my lungs, but it also reenergizes me to get back to work post lunch.  The Fitbit is offered in various models with an assortment of features and all varieties do the most important job--counting your daily steps!

Water

Drinking water is an essential part of staying healthy, which makes sense when you consider the fact that the human body is predominantly water based.  Water helps  to keep your skin looking hydrated and youthful.  It also promotes digestion and can even be the root cause of rumbly stomachs that are often mistaken for hunger cravings.  The general rule of thumb here is drink half of your body weight in ounces of water as a daily minimum.  So a 100lb person should be drinking a minimum of 50 ounces of water daily.  For those of you who are wondering if flat or sparkling makes a difference in hitting that daily minimum--it does not.  Water is water!  So if you prefer to drink a Perrier over a glass of still water, you can still put those ounces towards your total consumption for the day.

Multi-Vitamin

There are so many vitamins and supplements on the market promising various benefits.  I have been sucked into following various supplement regiments over the years that were expensive, time consuming and honestly, I am not even sure if they really provided any major benefit to my health.  After speaking with my primary care physician and conducting a fair amount of independent research, I am all about keeping it simple and sticking to just taking a daily multivitamin.  I am a relatively young and healthy person with a balanced diet, so there is no need for me to be overloading on supplements.  Taking one Multi-Vitamin daily (Centrum or One A Day - Men or Women) is reasonable, achievable and really all I need in terms of additional nutrition to my usual diet to keep healthy.

Sleep

Getting between 7-8 hours of sleep each night is critical for your health, mind, skin and overall happiness.  Like so many, my weeks are jam-packed with work and other activities so it is beyond important to make this a priority.  A few tips to set yourself up for success when it comes to achieving an ideal amount of sleep on a nightly basis:

  • Cut off caffeine by 3pm in the afternoon
  • Start your bedtime routine an hour before you actually want to fall asleep
  • Make sure your bed is comfortable (pillows, blankets, etc.)
  • Turn off electronics - computers and cell phones are stimulants that will keep you up.

Sunscreen

Not only should you wear sunscreen daily (yes, every day of the year), but it's also important to find a sunscreen that contains both zinc oxide and titanium dioxide.  These two ingredients on their own have reflective properties, so when combined they for an ideally protective pairing to keep you protected against harmful UVA rays. In addition, these two ingredients are chemical free meaning they are great for use on kids and people with sensitive skin (like myself).  I am actually a huge fan of using Mustela Sun Range Mineral Sunscreen Lotion SPF 50+ (yes, it's for babies but also happens to do a heck of a great job on my adult skin).  Another great option that you can find at most drug stores is CeraVe. 

So far so good with my implementation of these healthier lifestyle tips.  I am optimistic that I will be able to keep up these new lifestyle practices and hope that maybe I have given you a few ideas for how to improve your own well-being.  If you have any helpful tips or suggestions with regards to healthy living that I failed to cover in today's post, leave a comment or send me an email.  I always love to hear from you all!

Learn about the Art of Cocktail Making with these 3 Books

I have been having the best time styling and re-styling my new bar cart!  Who ever thought that a Christmas present could bring an adult the same type of joy and excitement a child expresses when they receive a new toy!?!  While decorating this bar cart continues to be super fun, I have realized that when it comes to making an actual cocktail, I am but a novice.  Now it's one thing to have a well decorated bar cart, but if you don't know how to properly use the tools you take so much pride in displaying, then what the heck is that?!?  

Over the weekend, I visited my local Barnes and Noble (I still really enjoy going to bookstores) to see what literature was available with respect to cocktail crafting. After some extensive research, I have put together a list of the three books I have found to be the most helpful/informative for anyone looking to better understand the world of cocktail crafting.  

Shake: A New Perspective on Cocktails, by: Eric Prum & Josh Williams

Eric Prum and Josh Williams have made the art of cocktail making extremely user friendly with the creation of their book, Shake.  From the simple yet beautiful visuals, to the easy to follow recipes, this book couldn't be a better starting point for getting your feet wet when it comes to learning how to craft a delicious cocktail.  Their recipe for "A Mid-Winter Marg." is already on my menu for Super Bowl Sunday and their section on Cocktail Crafting 101 has been extremely helpful to reference while I have been working to put together a properly stocked bar and bar cart.  For those of you looking for a high level overview of cocktail crafting and some delicious recipes, this book is for you!

The Craft Cocktail Party: Delicious Drinks for Every Occasion, by: Julie Reiner

I love this book not only because it contains cocktail recipes for every season, but also because the author, Julie Reiner, breaks down the basic formula for making a delicious cocktail.  In addition, she shares various tips and tricks for how incorporate an array of cocktail making techniques into your drink recipe and use what you have on hand to create a flavorful beverage.  If that weren't enough, I am totally in love with her cocktail presentations and I find her array of garnishes to be inspirational.  Julie Reiner shares so many great ideas for how to create and serve a show-stopping cocktail for any occasion, which is why this book has quickly become a favorite of mine. 

The Curious Bartender: The Artistry & Alchemy of Creating the Perfect Cocktail, by: Tristan Stephenson

I would have to say that of the three books selected for this post, this one speaks to my learning style the most.  I am inquisitive by nature and love to learn as much as I can when diving into a new subject, so this book couldn't be more perfect for me.  The Curious Bartender includes a history of every spirit, recipes for making delicious cocktails, a breakdown of how to stock your bar, lessons on various cocktail crafting techniques and a resource page detailing where to purchase all of those bar/bar cart accessories (like here).  This book is a wealth of knowledge, a go-to reference for me and a fabulous addition to my bar cart!

January Kitchen Tools

It's the dead of winter and without fail, I find myself craving something warm and delicious for breakfast daily.  While oatmeal is always the healthy breakfast of choice, there are times (especially Saturday mornings) where I can't resist whipping up a batch of delicious homemade waffles to enjoy with my husband while watching TV in our pajamas.  So for today's post (and my list of this month's kitchen tools) I wanted to share my waffle making essentials with you all.  Whether you are making classic, belgian or even Funfetti (pictured above) these tools and tips will help you achieve waffle making perfection.

Waffle Iron

When it comes to selecting a waffle iron, here are a few things to consider: 

  • Shape - Round, Square or Novelty Shaped
  • Style - Belgian or Classic.  Each style of waffle requires a different recipe, and the size of the waffle iron will correlate to the style waffle.  Belgian waffles are thicker and fluffier, so the waffle iron will be larger and often is double the size of a standard iron.  A classic waffle, while still delicious is thinner both in size of the waffle and waffle iron.  
  • Capacity - Waffle irons come in half and whole sizes, so it's important to determine if you are going to be using your waffle iron primarily for single serve use or to feed a family.

I am all about a classic waffle, so I opted for the All-Clad Classic Round Waffle Maker.  It's user friendly, offers a variety of cooking settings and produces waffles with perfectly browned and crisp exteriors and fluffy soft interiors every time!  This waffle iron is also great for cooking up french toast (pictured above) in a snap with little to no mess!.

Waffle Tongs

Waffle tongs are not something you typically think about when you're getting ready to make waffles, but you should.  Reason being, when it comes time to take the waffle off of the iron, people tend to resort to using forks or metal tongs which can and will scratch the nonstick surface of the waffle iron.  Scratches on nonstick metal surfaces will cause your food to stick and ultimately produce an imperfect/damaged product for every use.  These Williams-Sonoma Ultimate Waffle Tongs are great for removing waffles from a waffle iron, cooking paninis and even flipping bacon on a skillet!  Heat resistant, safe to use on most cookware and best of all, dishwasher safe!  In my opinion, every kitchen should be outfitted with a pair of waffle tongs.

Cookie Scoop

When it comes to pouring the batter onto the waffle iron, I am all about using my cookie scoop.  Sure, there are plenty of batter dispensing devices on the market (like this one), but in my opinion, they take up a lot of storage space and at the end of the day, really only serves a single purpose.  Using a cookie scoop allows you to create waffles of various sizes and can also be used for pouring cupcake batter and of course the obvious…cookies!!!  The cookie scoop is a fabulous waffle making tool, affordable and of course, its also dishwasher safe!

Waffle Book

I received the book, Waffles: Sweet & Savory Recipes for Every Meal by: Tara Duggan, as a gift for our wedding.  I didn't think much of it at first.  It was a nice book about waffles, but I mean how much could they really have to say about one food?  Of course, as soon as I opened the book I immediately ate my words!  This book not only has the most fabulously delicious waffle recipes, but it also teaches you how to go about making waffles from scratch (which has been life changing for me).  For those of you who have never experienced a waffle made from scratch, you are missing out!  They are packed with flavor, moist, fluffy and will put any box mix to shame.  If you have a chance to flip through this book, please do!  It has been a waffle making game changer for me and I think if you have the chance to read it, you will agree!

Healthy White Bean and Wheat Berry Soup

Now that the holidays are officially over, it's time to swap out my "festive" (aka indulgent) eating habits for some healthier choices.   Since we are in the dead of winter, I thought I would start by sharing a recent creation that is healthy, packed with vitamins and perfect for keeping warm during this chilly time of year-- White Bean, Veggie and Wheat Berry Soup!  This soup is filled with an array of delicious flavors and it is without a doubt my favorite go-to meal at the moment.   While it may look like a slightly complex recipe, I can assure you that it is totally do-able and the number of servings this recipe yields also helps to justify the time spent in the kitchen preparing this dish.  If you have time for a little cooking session this weekend, I strongly suggest giving this recipe a try.  

Soup Ingredients - White Bean and Wheat Berry Soup - Redefining Domestics 1.JPG

Ingredients

  • 3 Lg Shallots
  • Olive Oil
  • 2 5oz pkgs Shiitake Mushrooms
  • 3c Cooked Wheat Berries
  • 1 Yellow Onion (quartered and sliced thin)
  • 1 1/2c Diced Celery (4 Stalks)
  • 4 Parsnips Peeled and Diced
  • 1 Leek - Cleaned and Chopped (See this Video)
  • 1 Parmesan Cheese Rind
  • Bouquet Garni (Italian Flat Leaf Parsley, Sage, Rosemary, Thyme)
  • 9c Vegetable Broth
  • 3c Water
  • Kosher Salt
  • Fresh Cracked Pepper 
  • Whole Wheat Baguette (optional)

Initial Cooking Prep Instructions

  1. Preheat oven to 350 degrees fahrenheit
  2. Slice 2 large shallots thinly, spread on a baking sheet lined with parchment paper
  3. Lightly spray shallots with olive oil and sprinkle with salt
  4. Bake for 5-8 minutes, until slightly crispy, set aside
  5. Meanwhile, in a 12-inch skillet, heat 2Tbs Olive oil on medium heat
  6. When hot, add 2 packages of shiitake mushrooms (stems removed), sprinkle with salt and a splash of vegetable broth
  7. Cook mushrooms until tender (8-10min) and set pan aside

For the Soup

  1. In a large dutch oven, heat 3Tbs olive oil over medium high heat
  2. When oil is hot, add 1 shallot (thinly sliced) and cook until it begins to turn golden brown
  3. Add celery, onions, parsnips and leeks to dutch oven.
  4. Cook down (aka Sweat) vegetables until onions begin to look translucent (about 8-10min)
  5. Add vegetable broth, water, parmesan cheese rind and bouquet garni to dutch oven and simmer for 30 minutes (covered)
  6. Once simmered, remove bouquet garni and cheese rind
  7. Add cooked wheat berries, shiitake mushrooms and drained cannelloni beans to soup
  8. Simmer for an additional 10 minutes
  9. Add salt and fresh cracked pepper to taste.  **Note- you may need to add anywhere from 1-3tsp of salt to this recipe to properly season. 
  10. Serve soup with a garnish of charred shallots on top and toasted whole wheat baguette slices on the side.
