Create a Beautiful Easter Basket

March 24, 2016 Callie Cagney
Easter Basket 1.jpg

This weekend my husband and I (plus Dolly of course!) are headed up north to spend Easter with his parents.  In preparation for our visit, I mentioned that I will be baking this cake to serve at Easter brunch and I am also planning on bringing a homemade Easter basket as a hostess gift for my mother-in-law.

Yes, I totally went for it and created a very grand basket and hostess gift.  The reason for this elaborate creation is actually two-fold.  First, I hope you all can take some ideas from the many items/goodies you see here when creating your own Easter baskets. Second, right after my husband and I got engaged we went up to my in-laws for Easter and I will never forget the beautiful basket my mother-in-law had put together for us.  It was filled with beautiful candies, gourmet candles and even a toy for Dolly.  It was absolutely beautiful, very thoughtful and something I have always remembered.  So now I am thrilled to have the opportunity to reciprocate this Easter.

Before I could start assembling this Easter basket, I needed to make sure that all of my components were prepped and display worthy.  The chocolates that remained in their original packaging were given fresh coordinating bows.  These gourmet chocolate covered almonds from Whole Foods (pictured above) were transferred to a clear treat bag, tied with a bow and then situated in this beautiful bunny candy dish.

My favorite bit of additional packaging by far, would have to be the green and white Caspari treat box (pictured above).  I had found this box of adorable Easter cookies at Whole Foods, but didn't think that the original packaging would fit the aesthetic of my basket.  When I came across the green and white chevron box I was thrilled!  To keep the cookies looking great, I placed the entire store box inside the decorative box and then lined the edges with tissue paper to keep it from moving during transport.  The cutest part of this box would have to be the removable paper tray included.  It makes for easy removal of the treats from the box without causing damage to the cookies!  So cute and beyond practical.

To create this ultimate Easter basket, I started by lining the base of the basket with Easter basket grass I found at Target.  I then placed the biggest items in the basket first-  the cookie box, Napa Cellars Sauvignon Blanc, Easter bunny candy dish with chocolate jordan almonds.  Placing these items in first helped to balance the basket and begin to set up the parameters.

I absolutely adore Williams-Sonoma's holiday tea towels.  They are always beautifully designed and add a lovely and festive touch to any kitchen, so including this year's Easter themed tea towels was a must!  To display the set of towels- I placed them in front of the cookie box to provide the towels with additional support since they are similar in shape (*Tip- I inserted 2 bamboo skewers between the towels to keep them standing up straight).  Once I had secured the largest items, I began filling in the rest of the basket with most delicious assortment of Lake Champlain Easter Edition Organic Chocolates (again, all found at my local Whole Foods!).  I used the brightly colored chocolate eggs to flank the Napa Cellars wine and secured the Dark Chocolate Bunny to the handle (because it was simply too pretty and delicate to keep in the basket).  The final touches were the Hammond's Chocolate Egg and Hugo & Debra Naturals Egg Shaped Bath Fizz Set.

What makes this basket extra fabulous is the fact that with the exception of the packaging and tea towels, all items came from my local Whole Foods grocery store!  This month has been exceptionally busy with work, so not having to go on some crazy extensive hunt to find beautiful items for my Easter basket was so helpful!  I really hope my mother-in-law enjoys this basket as much as I enjoyed the one she gave me years ago.  For those of you celebrating Easter this weekend, I hope this post has provided you with some ideas for creating a beautiful gift basket for your loved ones.

Happy Easter!

Lemon Yogurt Cake with Raspberry Creme Fraiche Frosting

March 22, 2016 Callie Cagney

We are heading to my in-laws this weekend to celebrate Easter and I have been asked to bring a cake to serve at brunch on Sunday.  While going through recipes I stumbled across an old favorite of mine that I instantly thought would be perfect to bring this weekend.  This cake is actually a marriage of two recipes - Ina Garten's Lemon Yogurt Loaf and Giada De Laurentiis' Raspberry and Orange Cake.  Lemon combined with any type of berry always makes for a fabulous flavor profile, so combining Ina's Cake Recipe with Giada's Frosting Recipe was an instant winner!!!   The bright flavors and colors of this cake make it the perfect addition to any Spring menu.  Whether you are serving this cake for brunch or dessert, it is a definite crowd-pleaser and sings Spring time!

Cake Ingredients

  • Double the recipe (minus glaze) for Ina Garten's Lemon Yogurt Cake

Frosting Ingredients

  • Giada de Laurentiis' Frosting Recipe from Todd's Orange and Raspberry Cake

Decorations

  • 1/2 pint of Fresh Raspberries
  • Ina Garten's Lemon Glaze from her Lemon Yogurt Cake Recipe

Instructions

  1. Preheat oven to 350 degrees
  2. Grease a tube/angel food cake pan and set aside
  3. Make the cake batter according to the recipe
  4. Pour batter into the greased cake pan and bake for 1 hr and 5 minutes, positioning the cake on the lower third tier of the oven (until a cake tester comes out clean).  **Note- During the last 15 minutes of baking, cover the top of the cake loosely with a piece of aluminum foil to prevent the cake from burning
  5. During the last 5 minutes of baking, combine 2/3c Granulated Sugar and 2/3c Fresh Lemon Juice in a small sauce pan and heat until it begins to boil and sugar is completely dissolved
  6. When the cake comes out of the oven, pour the lemon syrup over the cake and allow it to soak for at least 3 minutes before removing the cake from the pan
  7. Meanwhile, make Giada's frosting recipe adding an extra tablespoon or two of milk to ever so slightly thin out the frosting
  8. When the cake is cooled, pour the frosting over the cake and allow it to set
  9. Once the frosting is dry, garnish the base of the cake with fresh raspberries and drizzle Ina Garten's Lemon Glaze on top of the cake

Easter Tablescape

Easter Tablescape Gold Dahlias.jpg

Easter is right around the corner and my holiday preparations are in full swing.  As I mentioned in my post on Spring Cheesescaping, this is the first major holiday where I will be hosting my family for dinner.  In preparation for this hostessing first, I wanted to create a beautiful table setting that is both festive and elegant.

In order to create an elegant yet festive look, this tablescape required a mix of both formal and informal tableware.  A few examples of how I achieved this balance include:

  • Framing my formal china with my everyday dinner plates
  • Topping my simple white tablecloth with beautiful gold placemats
  • Pairing my everyday green goblets with my formal crystal wine glasses.

In addition to sharing my formal/informal pairings, here is a breakdown of everything I used to create this Easter tablescape:

  • Placemats: Chilewich Gold Pressed Dahlia Placemats
  • Dinner Plates: Pillivuyt Basketweave Dinner Plates
  • Accent Plates: Bernardaud Constance Salad Plates
  • Napkins: Kim Seybert Meander Embroidered Napkins
  • Napkin Rings: Brass Napkin Rings
  • Steak Knives: Laguiole Ivory Steak Knives
  • Water Glasses: Villeroy & Boch Boston Goblets (Green)
  • Wine Glasses: William Yeoward Fanny Wine Goblets
  • Place Card Holders: Target Threshold Bunny Placecard Holders
  • Nests: Touch of Nature Wild Grass Nest
  • Glitter Eggs: Boston International Green Glitter Eggs
  • Bud Vases: Libbey Adorn Hurricane Vases
  • Votives: Tiffany & Co. Rock Cut Votives
  • Brass Tray: Barreveld International Iron Round Tray

Flowers

Lilies and Easter go together like peanut butter and jelly!  Even though I am not using white Easter lilies on this table, it still seemed very fitting to opt for bright pink calla lilies to add a pop of Spring color.  To finish the look, I divided a dozen bright pink roses into four small glass bud vases and placed them around the table.  The addition of the roses created a substantial presence for the color pink so that it didn't seem completely random in the sea of green, white and gold.

My Easter Dilemma

I would like to think that my Easter Tablescape has been finalized, but there is one small detail that has been preventing me from moving on to the next task on my Easter Prep Checklist.

As part of my process for creating a tablescape, I switch in and out a bunch of different table accessories before finding the perfect look.  Typically this is a fairly effective process, but this time it backfired.  One of my biggest challenges with this tablescape has been trying to determine whether or not I should include my rattan chargers.   They tie in beautifully to this scape because of the dried grass birds nests, but for the life of me I cannot make a decision because I like both looks.  If you have any thoughts on whether or not I should use the chargers for dinner this weekend, please leave a comment.  I would greatly appreciate any/all suggestions as I am totally stumped!

Even if you can't decide whether or not I should incorporate the rattan chargers, I hope you have a wonderful Easter holiday filled with family, memorable moments and maybe even a little tablescaping of your own.

Spring Cheesescaping

Spring Cheesescape 2.jpg

This Easter will be the first official holiday dinner that I host for my family (*Ahhh!!….kidding).  Naturally I have taken this entertaining opportunity to refine my spring season cheesescaping and tablescaping skills.  The big focus of this spread was to incorporate lighter and fruitier flavors that would be reminiscent of the spring season.   In addition, now that spring is officially here I can FINALLY start incorporating pops of color into my designs. Even though this scape was only a practice run, the flavors and design of this entire cocktail setting have made me excited to recreate this same spread for my family on Easter.

Table Decor and Serveware

I wanted to create a cocktail table aesthetic that was in line with the Easter dinner table decor (post coming soon), but didn't look like a total carbon copy.  Starting with the foundation, I came across this fabulous chevron paper runner (yes paper!) and couldn't resist trying it out.  It created a great backdrop for my serving pieces and since it's paper, clean-up couldn't  be easier!  From the foundation, I knew I wanted to create a tablescape with geometric edges and a color scheme that consisted of gold, white, pink and mint/aqua.  Here is a breakdown of this table's decor:

  • Cheeseboard: CB2 Hex Marble Board
  • Cheese Knives: West Elm Gold Cheese Knives Set
  • Cocktail Plates: CB2 Intermix Aqua Plate
  • Votives: CB2 Gami Rose Candle Holder
  • Hurricane: Simon Pearce Revere Hurricane
  • Bowls: Glass and Gold
  • Cocktail Napkins: Eddie Cocktail Napkins
  • Decanter: Riedel O Decanter
  • Wine Coaster:  William Yeoward Georgia Bottle Stand

Food and Beverage

This cocktail spread needed to be simple since I would be serving a full Easter dinner, so I kept the focus on the cheesescape and cheesescape pairings.  These nibbles were selected with spring in mind, meaning lots of fruits, herbs and lighter flavors.   Here is a breakdown of the cocktail party menu:

  • Cheeses: Cypress Grove Humboldt Fog, Wensleydale with Cranberries and Goat Cheese Rolled in Chili Flakes and garnished with a drizzle of honey and edible flowers.
  • Crackers & Crisps: 34 Degrees Toasted Onion, Simple & Crisp Dried Orange, Rosemary Crostini
  • Chutney: Virginia Chutney Co. Balsamic Fig
  • Additional Cheese Board Accompaniments: Dried Mixed Berries, Sweet and Spicy Pecans, Edible Flowers and Lime Leaves.
  • Fruit: Fresh Strawberries
  • Wine: Napa Cellars Pinot Noir and Kim Crawford Sauvignon Blanc
  • Water:  Infused with Fresh Kumquats and Meyer Lemon Slices

Stay tuned for part 2 of my Easter entertaining extravaganza. Easter tablescaping is coming to the blog on Monday!
